Baked Fig in Bayonne Ham
Fresh ripe fig wrapped in Bayonne Ham topped with honey and baked.
For 4 persons
12 Ripe figs
Three large or six small slices Bayonne Ham say about 150gm
12 Tsps of Honey
Heat the oven to 180C gas mark 4 (350F)
Cut the Bayonne Ham into strips about 4 cm wide (1 1/2")
Cut the stem end from each fig to just expose the inside.
Wrap each fig in a strip of Bayonne ham so that the base of the fig is the base of the slice of ham and the top of the fig has a collar of the ham above it.
Fill the collar with honey.
Place on a lightly oiled baking tray and bake for 6 to 8 minutes.
Serve in groups of three. Some of the honey will inevitably escape the ham collars, pour this back over the groups of figs before serving.
