Ingredients

For 6 persons

Preparation time 30 mins
Cooking time 35 mins

1 kg aubergines
4 eggs large
20 cl fresh single cream
60 gm flour
salt, pepper, nutmeg

Preparation

Peel and slice the aubergine before boiling in water for 20 minutes. Strain and liquidise.
Mix the pureed aubergine with the eggs, fresh cream, flour, salt, pepper, and nutmeg.
Pour the mixture into an oven dish.
Cook in a pre heated oven for 35 minutes at 230c. Allow to cool and serve.
