Another favourite with the Basques, traditionally served with Brebis, our Ossua Iraty prize winning 12 month matured for instance. Itxassou (pronounced Istassou) is a small village in le Pays Basque which the locals say produces the best black cherry jam and we have it. Each jar contains 320 gm. of jam.
